Today was declared as Blue Monday, the day that people feel most depressed.

How did they get to that?

In 2005 a holiday company came up with this idea for the most depressing day in the year. Apparently, they took into consideration debt, available money, Christmas hipe that went away and New Year’s resolutions that drifted to nothingness.

Add to that the weather and you get the perfect recipe to feel depressed.

If this is how you feel then let me cheer you up with one mightly vegetable. The sweet potato.

These are great for lifting up your mood as they contain folate, which helps the brain produce serotonin, known as the happy chemical.

They will satisfy your belly and have fewer calories and way more vitamin A  than the white potatoes.

You can roast them, steam them, boil them as you like.

Personally, I like roasting them and top them up with tahini sauce.
